1 lb ground turkey, lean or extra-lean
½ onion, chopped
1 garlic clove, minced
1 carrot, shredded, chopped
½ cup plain breadcrumbs
1-2 Tbsp. fresh parsley, chopped (or 1 tsp dried)
Salt and pepper to taste
DirectionsCombine in medium bowl ground turkey, onion, garlic, carrot, egg, breadcrumbs and seasonings. Mix well.
Using hands, form into medium-sized balls (about 1/3 cup) and place on greased baking sheet. Bake for 30 minutes at 350°F. Serves 4-8.
Serve with sauce of choice. A quick and easy tomato sauce: saute’ ½ onion and 1 garlic clove chopped in 1 Tbsp. olive oil. Add 1 14.5 oz can of diced tomatoes (with juice). Season with ½ tsp dried basil, ½ tsp dried oregano, ½ tsp garlic powder, ¼ tsp salt, and ¼ tsp dried thyme. Allow mixture to simmer for 20 minutes. Scrape all ingredients into blender and puree until smooth. Serve over meatballs and with pasta of choice.
