¼ cup sugar or stevia
5 cups seedless watermelon, cubed
¾ cup freshly-squeezed lemon juice
¼ cup loosely packed mint leaves + more for serving
Directions1.Heat ¼ cup sugar with ¼ cup water over medium-high heat in a saucepan. Cook until sugar is dissolved, about 5-6 minutes. Set aside and allow to cool.
2.Pulse watermelon in a blender until smooth. Strain through a fine mesh colander into a bowl and place back into the blender. Add the lemon juice and mint and blend until mint is very finely chopped. Transfer to a pitcher and add simple syrup.
3.Chill until ready to serve, adding ice cubes and mint as garnish.
