Zucchini Parmesan Breakfast Muffin Cups



Ingredients

INGREDIENTS
1 small zucchini, shredded
4 links Jones Dairy Farm sausage, diced
6 large eggs
½ teaspoon garlic powder
¼ teaspoon freshly ground pepper
1
¼ cup finely shredded Parmesan cheese, divided

Directions

DIRECTIONS
Preheat oven to 375°F.
Grease 12-cup muffin tin with nonstick cooking spray.
In large bowl, whisked together eggs, garlic powder, pepper and 1 cup cheese.
Stir in zucchini and sausage.
Divide mixture between muffin tin cups and sprinkle remaining cheese over top.
Bake for 20-25 minutes or until eggs have set and tops are golden brown.
